Apple Cinnamon Muffins — Muffin Monday

As autumn is already in full swing I find my baking includes fallish items like cinnamon and spice, apples and pumpkin.  So today, I decided the muffin should be apple cinnamon muffins which includes apples and spice.  How wonderful!    My grandson decided he wanted to help so we used this recipe because it is best when hand mixed.  He had a great time helping make the muffins but, he liked eating the finished muffins best.  And of course, everything tastes better in a fancy teacup….even milk.

  • 1/4 cup butter softened
  • 2/3 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract

 

  • 3/4  cup peeled chopped apple

 

  • Course clear crystal sugar for garnish

  1. Preheat oven to 350F and line 12 muffin cups with muffin papers or lightly spray with baking spray then set aside.
  2. In a separate bowl, whisk together flour, salt, baking powder and spices and set aside.
  3. Beat butter and sugar by hand till light and fluffy, about 3 – 5 minutes.
  4. Beat in eggs one at a time till fully incorporated with the butter sugar mixture before adding the next one then add vanilla extract and mix until well blended.
  5. Gradually add combined flour mixture and beat into butter mixture by hand using a spatula or wooden spoon till just blended.
  6. Mix in milk just until mixture is smooth.  DO NOT over beat.
  7. Gently fold in chopped apples with a spatula or wooden spoon being careful to not mix too much. DO NOT over mix.14036
  8. Using an ice cream scoop dip dough into paper lined muffin cups, fill almost full.  Top with coarse clear crystal sugar if desired.
  9. Bake at 350F oven for 25-30 minutes till tester tests clean.
  10. Makes 12 muffins
